Stir-fried Sole Fillet with Sate Sauce - 沙爹翠瓜炒龍脷


Ingredients Sole fillet 200 g [cut into pieces], Courgette 150 g [cut into diamond pieces], Bell pepper (s) a little [green, diced], Bell pepper (s) a little [red, diced], Pineapple a little [diced], #myjimmysate 2 tsp, Minced Garlic a little, Water a little Sauce & Marinade Dark Soy Sauce a little , Sugar 1/2 tsp, Salt 1/5 tsp Method: Mix sole fillet with marinade (Soy Sauce a little , Corn starch a little ,) for a short while. Heat a little oil. Pan-fry sole fillet until done. Set aside. Stir-fry jade melon with water until done. Set aside. Stir-fry bell peppers, pineapple, minced Garlic and #mujimmysate in a little oil until fragrant. Add sole fillet, jade melon, seasoning mix and stir well. Note: This recipe is provided by Crystal Lotus, Hong Kong Disneyland Hotel - Chef Tsoi Chiu Fai. 材料 鯰魚柳 200 克 [切塊], 翠玉瓜 150 克 [切欖核形], 甜椒 少許 [綠色, 切粒],甜椒 少許 [紅色, 切粒],菠蘿 少許 [切粒],#正味沙爹醬 2 茶匙,蒜蓉 少許,水 少許 調味料 老抽 少許,糖 1/2 茶匙,鹽 1/5 茶匙 做法: 龍脷魚柳用醃料(頭抽 少許,粟粉 少許)拌勻略醃備用。 燒熱少許油,將龍脷塊煎熟備用。翠玉瓜加少許水炒熟備用。 用少許油炒香甜青紅椒、菠蘿粒、蒜蓉及#正味沙爹醬,倒入龍脷塊、翠玉瓜及調味料炒勻。 註: 食譜由香港迪士尼樂園酒店晶荷軒餐廳蔡朝暉師傅提供。
