Spiralized Satay cucumber salad with Halloumi - 沙爹黃瓜沙律

Jimmy’s sate sauce is really rich and taste really good, it’s one of the best I’ve tasted that you can buy in a jar, it’s a little pricy but well worth it and it goes a long way.

Ingredients 2 Lebanese cucumbers,2 tbsp satay sauce,2 tbsp peanut butter,1.5 tbsp sesame seeds [toasted],¼ cup peanuts [toasted],2 stick of finely cut celery 1 spring onion chopped,4 sprigs of coriander, chopped 4-5 slices Wattle Valley Halloumi cheese, browned in a fry pan

Method: 1. Toast peanuts and sesame seeds in a small fry pan fir 1-2 minutes until they start to change colour. 2. Cook Halloumi cheese in the same fry pan until browned, then chop into pieces. Slice the celery, thinly. 3. Place ‪#‎myjimmysate‬ and peanut butter together and stir, add a little water to help mix if needed. 4. Spiralize the cucumber onto several sheets of paper towel, press more paper towel over the top to get rid of as much of the juice as possible. 5. Mix all ingredients together, and serve.
