Satay Chicken Skewer - 沙嗲雞肉串燒

Ingredients

400g Chicken thigh meat, skinless, 30g Galangal, 2 Lemongrass, 4 Shallots, 3 cloves Garlic, 50mL Oil, 50mL Coconut milk, 1 tbsp Brown sugar, 1 tbsp Fish sauce, 1 tbsp Sweet soy sauce, 1 tbsp Turmeric powder, 2 tsp Ground cumin, 1 tsp Chili powder, 1 tsp ground coriander, Bamboo skewers, soak in water to prevent burning

Satay Sauce Ingredients:

200mL Coconut milk, 60g Peanut butter, 1 tbsp Lime juice, 1 tbsp Fish sauce, 1 tbsp Brown sugar

1 tsp Crush red pepper

Method

1. Preheat the oven to 180°C.

2. Slightly pound the lemongrass and galangal.

3. Place the lemongrass, galangal, shallot and garlic in a food processor and blend into paste.

4. Add the oil, coconut milk, brown sugar, fish sauce, sweet soy sauce, turmeric powder, ground cumin, chili powder, ground coriander and blend together. Transfer to the paste to the zipper bag.

5. Cut the chicken into 1” strip and add the chicken in the bag with the paste. Shake well and refrigerate for 2-3 hours to marinate.

6. Place the chicken on the skewer and lay it on the rack over the baking tray.

7. Place in the oven and bake it until golden brown. Flip it over once the top is golden brown.

8. To prepare the peanut sauce. Place all the ingredients except lime juice in a sauce pan and whisk until combine.

9. Bring it to simmer on medium heat. Keep stir until it is smooth, remove from the heat and stir in the lime juice.

10. Transfer to the small bowl and serve with the skewer.

材料

雞腿肉(去皮) 400克,南薑 30克,香茅 2條,乾蔥 4粒,蒜頭 3瓣,油 50毫升,椰奶 50毫升,黑糖 1湯匙,魚露 1湯匙,甜豉油 1湯匙,黃薑粉 1湯匙,小茴香粉 2茶匙,辣椒粉 1茶匙,芫茜粉 1茶匙,竹簽(預先浸水以防燒焦)

沙嗲醬材料:

椰奶 200毫升,花生醬 60克,青檸汁 1湯匙,魚露 1湯匙,黑糖 1湯匙,辣椒碎 1茶匙

做法:

1. 預熱焗爐至攝氏180度。

2. 用鍾子輕拍香茅及南薑。

3. 將香茅、南薑、乾蔥及蒜頭放入攪拌器中攪拌成醬。

4. 加入油、椰奶、黑糖、魚露、甜豉油、黃薑粉、辣椒粉、小茴香粉及芫茜粉拌勻,然後將材料倒入密實袋中。

5. 將雞腿肉切成1吋長條,將雞肉放入密實袋中沾上調味料,放入雪櫃冷藏2-3小時醃味。

6. 用竹簽串起雞肉,放在放有焗爐架的焗盤上。

7. 將雞肉放入焗爐焗至金黃色,反轉另一面焗至表面金黃色。

8. 製作沙嗲醬。除青檸汁外,將所有材料放入小鍋中拌勻。

9. 將沙嗲醬材料用中火煮至微滾,一直攪拌直至醬汁滑溜,熄火後加入青檸汁。

10. 將沙嗲醬倒在小碗中,伴以雞肉串享用。
