Satay Chicken Korma 印度咖哩雞
Ingredients: 250g boneless chicken breast or thighs (remove the skin and cut into bite-sized pieces) Put all these ingredients in a handheld blender to blend into a thick paste 2 cloves of garlic 3cm fresh ginger 1 small onion 1 green chilli 1/2 tsp turmeric powder 1/2 tsp garam masala 1 tbsp of Jimmy Saté Sauce 2 tbsp sunflower oil 1 large potato 2 tbsp frozen peas Half tin of coconut milk 2 bay leaves 125ml boiling water Method: 1. Heat a large saucepan or a wok over medium heat with sunflower oil, pour the blended thick paste to saucepan or wok to cook, stir constantly and reduced the heat to cook for 8-10 minutes or until golden brown. 2. Place the chicken pieces into the saucepan/wok, then add Jimmy Saté Sauce to mix well with the fried spices, turn the heat up to medium, while cooking, stirring occasionally until chicken turns golden brown, this process will take 7-8 minutes. 3. Add water, coconut milk, bay leaves and potato cubes, cover the saucepan with lid and lower the heat to simmer for 10-15 minutes, uncover the lid and stir occasionally to prevent sauce burning. 4. Add frozen peas and salt according to taste, simmer for a further 10 minutes until chicken tender and succulent. 5.
