WATERMELON SALMOREJO
Inspired by a dish fellow chef Omar Allibhoy taught me to make. This Spanish cold soup is called Salmorejo. I loved it so much so I adapted the recipe adding refreshing watermelon and a touch of spice with Jimmys. This dish is really quick to make and makes a light and flavoursome starter or a light meal on
INGREDIENTS
2 garlic cloves, roughly chopped
3 medium tomatoes, roughly chopped
350g cold seedless watermelon, roughly chopped + extra to serve
2 tbs Jimmy’s Sate
1 ½ tbs sherry vinegar
1 ½ tsp salt
Pinch of black pepper
4 - 5 ice cubes
1 ½ tbs extra virgin olive oil
30g crusty bread, torn to pieces
METHOD
STEP 1
Place everything apart from olive oil and bread in a blender.
STEP 2
Blend on high till smooth.
STEP 3
Add olive oil, bread and blend on high till very smooth.
STEP 4
Add more salt if necessary. Serve very cold with finely diced watermelon and a drizzle of olive oil.
